Inny’s Keto-Friendly Bakery makes gluten-free, low-sugar treats


While many people started cooking during the pandemic, for West Knoxville resident Irum Mahmood it has become a business in its own right.

Mahmood opened Inny’s Bake Shop, a keto-friendly bakery, in July 2020. In September, she had so many orders that she had to move from her home to a commercial kitchen.

The idea came to her because she noticed a lack of options in Knoxville for people with dietary restrictions, especially diabetes. She was already making low-carb, sugar, and gluten-free foods for her diabetic mother, even adjusting old family recipes to make them safe for her mother.

“On birthdays we had or something, she really didn’t have anything to eat,” Mahmood said.

As a nutritionist, she said, she knew very well how to stabilize someone’s blood sugar and pack a food with protein. Some of his friends started to encourage him to start a business. She chose the name Inny based on her childhood nickname.

She spread the word via Instagram and reached out to other local business owners. She quickly collaborated with the Golden Roast at their Sutherland Avenue location, making it a pumpkin and spice flavored syrup without sugar. Food groups in the city began reposting her photos on Instagram and word spread.

“Social media is a wonderful thing,” she said.

After a full year of operation, she learns which items are the most popular season by season. Breads are popular in the summer, including their jalapeño bread, pizza muffins, and focaccia. Top-selling summer candies include Salted Caramel Brownies and Lemon Bars, while in the fall, pies are more popular, especially its Chocolate Chip Pecans.

Her personal favorites all year round are the caramel peanut butter blondies and focaccia.

“I have missed bread a lot since I started to eat like my mother,” she said. “[Ours] rivals real focaccia bread. She also noted that “a lot of people just lack some kind of bread substitute with their meals. “

Its fall menu will be released on September 15. Some of the new options: Dairy-free Apple Cider Cinnamon Bread, Maple Bacon Bread, and Caramelized Onion and Goat Cheese Pie. VIP customers will get a preview soon.

She also developed pumpkin spice latte cupcakes “with a Starbucks straw to make it look like latte,” she said.

Inny’s does not currently have a storefront, but they ship throughout the Americas and deliver to most areas of Knoxville. Some items are also available at Southern Market in Bearden and Tonya Rea’s Teas and Remedies on North Broadway.

“It gives my little bakery a lot of use in serving people who were previously overlooked, like in grocery stores or local chains,” Mahmood said, but his customers also include “a lot of people who have no restrictions and who are perhaps more adventurous.

“I encourage everyone to try us at least once,” she said. “Inny’s is for everyone; it’s a great healthy option if you feel like it.
